Biography

Professor Emeritus Donald Oberleas, PhD Professor Emeritus Texas Tech University, Lubbock. Education: PhD, Agricultural Chemistry l964, University of Missouri, Columbia; MS, Agriculture (Nutrition) 1959, University of Kentucky, Lexington; BS, Agriculture, Purdue University. Research Interests: Dr Oberleas has had extensive research experience with phytate and zinc homeostasis, including the phytate: zinc molar ratio. He has studied the nutritional interaction between these substances in animal models such as chicks and rats. Experience: Dr Oberleas held professional positions at Wayne State University in Detroit, Michigan and the Veterans Administration Hospital in Allen Park, Michigan, where he did nutrition research with Dr Harland on human subjects. Chairman, Department of Nutrition and Food Science, University of Kentucky. Chairman, Department of Foods and Nutrition, Texas Tech University, Lubbock, Texas. Held a research position with the USDA laboratories in Beltsville, Maryland and an industrial position with the Gerber Products Company, Fremont, Michigan. Dr Oberleas has over 200 peer-reviewed publications.
